Vietnamese Beef Noodles

Following is a typical easy to cook recipe from the chef at HelloFresh.

Serves 4

Ingredients

600 g beef strips

4 tbs soy sauce

4 tbs fish sauce

2 tsp sugar

2 ginger, small knob grated

2 long chilli, de-seeded and finely chopped

4 tbs vegetable oil

4 carrots, grated

1 bunch of mint, torn

1 cos lettuce, finely sliced

400g vermicelli noodles

For the beef

Place the beef strips into a small bowl and add half of the soy sauce. Mix the beef until completely covered in soy. Set aside to marinate.

For the dressing

In a small bowl add the remaining soy sauce, fish sauce, sugar, grated ginger, the finely chopped red chilli and the vegetable oil. Whisk together until the sugar has dissolved then leave aside.

For the noodles

Bring a pot of water to boil, add the vermicelli noodles and cook for 2 minutes on the stove. Remove the pot from the heat and leave the vermicelli noodles in for another 2 minutes. Drain and leave aside.

For the beef

Heat a little oil in the pan over high heat. Add the beef and cook for 2-3 minutes stirring regularly until the beef is just cooked through. Remove from heat and leave aside.

To serve

Divide the noodles between bowls. Top with the beef, then the carrots, mint and cos lettuce. Dress each with a few good spoons of the dressing and then get involved!
